My grandmother-in-law had the most amazing buttermilk waffle recipe on the planet. That is what I served my family for breakfast for years and years. Then we went grain free, which has been so wonderful for our health, but we definitely were missing waffles for breakfast!
I came across a wonderful grain free waffle recipe but needed to adjust some of the ingredients for our health needs. It turned out to be the most satisfying, filling, and comforting breakfast we have come across to date. Even the men of the house who are waffle connoisseurs were very pleased with the final product!
These are really great to keep on hand pre-made and can be easily and quickly thrown into a toaster or toaster oven to crisp up perfectly for a left over snack or an on the go, out the door breakfast meal.
Grain Free Waffles
Ingredients
- 3 eggs
- 1 c almond Butter
- 1/3 c. coconut milk
- 3 Tbsp. local raw honey
- 3 Tbsp. cold pressed coconut oil
- 1/4 tsp. fine sea salt
- 3/4 tsp. baking soda
- 3 Tbsp. coconut flour
Instructions
- Put all liquid ingredients in a blender or vitamix. All dry ingredients can be placed on top after the liquid to ensure that it blends well.
- Heat your waffle iron to level 2.
- Place batter evenly into the waffle iron and cook until brown and they can be pulled off easily with a fork.
Serve with pure maple syrup and feel like life is normal again!
