Dairy free, grain free enchilada sauce makes it possible for you to enjoy those wonderful Mexican flavors without sacrificing things like enchiladas ever again. This flavorful sauce is easy with just a few ingredients and stretches easily to feed a big crowd. Use it with yuca plantain tortillas to finish out your grain free, dairy free south of the border meal!
Dairy Free Grain Free Enchilada Sauce

Servings: 3-6
Ingredients:
3 tablespoons chili powder
3 tablespoons gelatin powder
1 teaspoon cocoa powder
1/2 teaspoon garlic salt
1 teaspoon oregano
3 cups water
8 oz. tomato sauce
Directions:
- Combine all dry ingredients (EXCEPT the gelatin) in a small bowl.
- Stirring constantly, slowly add enough of the water to make a thin paste.
- Pour into pan and add rest of water.
- Cook over medium heat, stirring constantly, until reaches a low boil.
- Add gelatin and stir consistently until mixture thickens and gelatin fully dissolves.
- Stir in tomato sauce.
Use in your favorite enchilada recipe.
The amounts on the ingredients are very flexible.
Experiment to suit your taste, but don’t leave out the cocoa – it’s the secret!
For a quick meal, you can fry a tortilla in a bit of olive oil till crispy, brush with enchilada sauce, and lay it flat.
Place some cooked shredded chicken or cooked ground beef on the tortilla and sprinkle it with chopped onions and sliced black olives, jalapenos, cilantro, tomato. You’ve got yourself a tostada!
If you prefer quesadillas, take two tortillas like a sandwich and fill them with your favorite ingredients. Place the tortilla sandwich in a hot cast iron skillet with olive oil and quick fry on both sides! Olé!
